AMI
AMI a wine project by Paul Marchand-Perarnau and Willy Roulendes resides in the Maranges. Both Paul and Willy had experiences in wine with different paths that led them to start AMI. Paul was previously a sommelier, while also spending some time in the import arm of Dynamic Vines in London. Willy worked the vines and has a vast experience in winemaking. Both Paul and Willy had spent time working at leading domaines such as Domaine de Montille in Puligny-Montrachet and La Maison Romane in Vosne-Romanée. Their first vintage was made in 2014, and have now been known to be one of the new guards of natural Burgundy.
The Domaine consists of 2 ha of vines, with around 4 ha worth of organic grapes purchased from friends in various villages throughout the Côte-d'Or. In the cellar, they vinify using indigenous yeasts, and without temperature control. The reds macerate for around 10-15 days - the first 4 days they are left untouched, so it is slightly carbonic. They then do gentle pigéage and remontage, before the wines finally go into old barrels (they never use new oak). There is no bâtonnage for the whites - it is not necessary as they like to keep a lot of lees in the barrels. There is never fining or filtration, and there are no additions except for 10-30 ppm SO2 just prior to bottling.
