DOMAINE CHEVROT
Domaine Chevrot is located in Maranges, the southern-most part of the Côte d’Or. The Chevrot family have been making wines in Maranges since 1830, and Domaine Chevrot was founded in 1936 by the grandparents of the current winemakers, Pablo and Vincent. The brothers has kept the tradition of their parents, but have converted the vineyards to certified organic. Biodynamics is also practiced but they are not certified as of yet. The Domaine consists of around 20 hectares centered on Maranges with some plots in Santenay.
The average of the vines is 30 years, with the oldest plots going up to 75 years, planted by their grandfather. Entry-level cuvées are often destemmed, with 10-20% whole cluster kept for the 1er cru cuvées. Only indigenous yeasts are used for fermentation, with minimal sulfur used. A small amount of new oak 5-10% for village, 20-30% for 1er crus, are used for aging. This helps them make wines that truly resemble the sense of place, without losing depth and power in the wines.
They are one of the true gems of southern Burgundy, and we are honored to represent them here in Taiwan.
