Domaine du Chancelier, led by Elsa and Cédric Ehrhart, combines Burgundy's tradition with contemporary winemaking methods. Located in an 18th-century building in Beaune associated with Hospices de Beaune founder Nicolas Rolin, the estate commenced in 2016 with purchased fruit and expanded to five hectares by 2020. The Ehrharts adhere to organic practices, overseeing the harvests for their contracted plots with the aim of honouring the terroir.

Their renovated, gravity-fed winery minimizes fruit manipulation, with whites being hand-harvested, pressed, and aged on fine lees without sulfur or additives, and with reds undergoing gentle extraction, including "Vinification Intégrale," fermenting and aging in the same barrels without sulfur.The meticulous care applied at every stage of production ensures the creation of exceptional quality Burgundies. Domaine du Chancelier is poised to become one of the most sought-after wineries in the region, making it a valuable destination for collectors and wine enthusiasts.
