Lo-Fi is a collaborative project between lifelong friends Mike Roth and Craig Winchester. They are dedicated to crafting authentic wines designed for everyday enjoyment rather than collection. Their focus is on easy-drinking, lower-alcohol wines that pair well with a variety of foods, from pizza to foie gras.

The team adheres to certain winemaking principles, including the use of neutral barrels, native yeasts, minimal sulfur additions, and no adjustment of pH. They have a particular fondness for whole-cluster fermentation and carbonic maceration. The philosophy behind their winemaking is to embrace a "nothing added, nothing taken away" approach, resulting in wines that are youthful and full of vitality.

In essence, the definition of Lo-Fi is largely determined by what it avoids rather than just what it embraces. It steers clear of over-manipulation, over-extraction, over-ripeness, and overpricing. Over the past few years, their vision has resonated with the public, leading to substantial growth, with an impressive production of 7,000 cases per year. Some of the fruit comes from vineyards they farm, while other grapes are purchased. The result is a collection of wines that are not only exciting and engaging but also deeply soulful.
